Crepe Suzette with Lemons

One of my friends once told me she had never had crepes before so my solution was to not make just plain crepes...... but crepe suzette! Now the problem was I only had lemons not oranges aaaaand I only had white wine. So maybe you can't consider it a crepe suzette.   

Serves: 6

Crepe Ingredients:

  • 150 g flour
  • 45 g sugar
  • 3 eggs
  • 360 g milk
  • 30 g butter
  • 1 tsp vanilla
  • pinch of salt

Sauce Ingredients:

  • 3 Lemon (Zest and Juice)
  • 60 g Sugar
  • 60 g Butter
  • 30 - 40 ml White wine


First prepare the crepes. (You can use a blender but I prefer by hand)

Mix the dry ingredients together.

Melt the butter.

Make a well in the middle of the dry ingredients and crack the eggs into the well. I like to use a fork to slowly mix the eggs and the dry ingredients. Whisk the eggs and little by little incorporate the dry mixture by scraping the sides of the well.

Then in a slow stream add the milk, butter and vanilla.

Once mixed, pass it through a sift and let it rest for an hour.

Heat you pan, butter it and then your set to start cooking your crepes.

For the sauce:

Zest and juice the lemons.
