Delicious Vanilla Cupcakes

This recipe is one that I have been making for years. I first learnt it in culinary camp in Montreal and my family has loved them ever since. I find that they go really well with lemon buttercream and sometimes I like to make them cookiedough cupcakes. You can do that by just adding a ball of cookie dough to them before baking. This recipe I have made for my siblings birthdays whenever we are all together. Plus you can have fun and try practicing your pipping.

Bake time:

Cupcake Ingredients:

  • 1 ½ cup of all purpose flour
  • 1 ½ tsp of baking powder
  • ½ tsp of salt
  • ½ cup of soft butter
  • ¾ cup of sugar
  • 2 eggs
  • 2 tsp of vanilla essence
  • ¾ cup of milk

Buttercream Icing Ingredients:

  • ½ cup (125 ml) of unsalted butter, softened
  • 3 cup (750 ml) of icing sugar
  • ¼ cup (60 ml) of milk
  • 1 tsp (5 ml) of vanilla essence


How to prepare the Cupcakes:

            Before you start your cupcakes you must preheat the oven to 350 ºF. If you don’t preheat your oven you might not bake the cupcakes evenly.

            The next step is to take a large bowl, and put in your flour, baking powder and salt. When putting these ingredients in you must sift the ingredients. You must not make a mistake by putting too much baking powder or salt. If you do it will not taste good and you will not enjoy it.

            In another bowl put in all the wet ingredients. Beat the butter until it’s creamy and add sugar, eggs and vanilla. Mix the butter with the sugar, eggs and vanilla until there are no more pieces of butter. If there are pieces of butter try breaking them. Everything is mixed together.­

            Now that there’s the flour mixture and the wet mixture, take the flour and pour it little by little into the wet mixture and add the milk. Stir while pouring the flour mixture and milk in the wet mixture or it can have lumps of the flour mixture in it. Once there is no more flour mixture, mix the ingredients together well.

            If you want to make them fun and stylish separate half of the mixture and put it in another bowl. In that bowl of batter add some cacao powder and mix it. If you want to do the original recipe just fill the muffin cups up to ¾ and bake for 20 minutes. If you do it the stylish way you take some of both mixtures and swirl them in the muffin cups. The cups must be filled up to 3/4 and it should bake for only 20 minutes.

How to prepare the Frosting:

            Take a bowl and cream the butter in it. While creaming the butter add the icing sugar and continue creaming. Once the butter and icing sugar are creamed together add the milk and the vanilla and mix. If it’s done it should have a white colour and not too liquid. Then place it in the fridge for 1 hour. After 1 hour you can add some flavour to it, like lemon juice or cacao powder and mix the flavour in. Then you can put it on the cupcakes and then you are done.
